Featured Weekly Recipe- Korean Beef Bowls

Makes 4 servings
(Macros per serving: 52g carbs, 29g protein, 20g fat)
INGREDIENTS:
1 onion, diced
1 tablespoon toasted sesame oil2pounds 90% grass-fed ground beef
1 teaspoon red pepper flakes
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon ground ginger (optional)
1/2 teaspoon salt
1/2 cup coconut aminos
4 cups cooked white rice or 2 cups dry
1 packet Beef Boost Broth (or beef bone broth and follow directions to make rice with this as the liquid)
8 cups greens of choice (chopped romaine, arugula, spinach)
Green onions and cilantro for garnish (OPTIONAL)
DRESSING:
8 tablespoons light ranch
4 tbsp siracha sauce (adjust to taste)
INSTRUCTIONS:
Start by preparing rice in required water and broth packet, to have it ready.
Dice onion and set aside.
Heat a large skillet over medium-high heat and add sesame oil. Once hot, add in ground beef. Break the beef up into small bits.
Add the onion, ginger, red pepper, garlic powder, onion powder and salt and mix with the beef. Continue cooking, stirring occasionally, until the meat is browned and developing some crispy bits, about 8 minutes.
Add the coconut aminos and cook for another 3-4 minutes.
If you are making the optional dressing, mix the light ranch and siracha sauce in a small bowl.
Serve beef in a bowl over a bed of greens with rice. Top with optional sauce and Garnish with green onion and cilantro!
